Beet Chips

Not sure how to enjoy beets? Try this easy recipe for a quick healthy snack. 🫜

Equipment

Ingredients 

  • 2 tbsp olive oil

  • 2 beets

  • 1/2 tsp salt

Instructions 

Prep

  • Wash and chop off the ends of the beets

  • Slice the beets into 1/16 inch slices with the mandoline slicer.

  • Place the beet slices in the small bowl.

  • Cover in olive oil and salt.

  • Toss and leave for 20 minutes

    • Tip: This helps the beets keep their shape and color when baking.

Bake

  • Pre-heat oven to 300 degrees.

  • Lay out two baking sheets, covered in parchment paper.

  • Drain the oil from the bowl.

  • Toss the beets.

  • Lay out slices on the baking sheet.

  • Bake until crips, but not brown, about 30 minutes.

  • Let cool completely before storing in an air-tight container.
