Beet Chips
Not sure how to enjoy beets? Try this easy recipe for a quick healthy snack.

Equipment
2 baking sheets
Parchment paper
1 small bowl
Ingredients
2 tbsp olive oil
2 beets
1/2 tsp salt
Instructions
Prep
Wash and chop off the ends of the beets
Slice the beets into 1/16 inch slices with the mandoline slicer.
Place the beet slices in the small bowl.
Cover in olive oil and salt.
Toss and leave for 20 minutes
Tip: This helps the beets keep their shape and color when baking.
Bake
Pre-heat oven to 300 degrees.
Lay out two baking sheets, covered in parchment paper.
Drain the oil from the bowl.
Toss the beets.
Lay out slices on the baking sheet.
Bake until crips, but not brown, about 30 minutes.
Let cool completely before storing in an air-tight container.
