Bison Pot Roast

Ingredients
5 carrots, chopped
3 celery sticks, chopped
1 large yellow onion, diced
5 garlic cloves, minced
1.5 lbs potatoes, 1” pieces
1 tsp salt
1 tsp black pepper
1 tsp thyme
1 tsp rosemary
2 tbsp olive oil
4 cups beef broth

Instructions
Prep
Pat the bison dry.
Cover with salt and pepper.
Heat olive oil in the caste iron on medium.
Once sizzling, brown the bison on all sides.
Place in the crock pot.
Add the onion and garlic to the pan and cook until brown, about 5 minutes.
Transfer to the slow cooker.
Slow cook
In the slow cooker, add the broth, carrots, celery, spices, and parsley.
Cover and cook for 5 hours on LOW.
Add the potatoes and cook for another 3 hours.
Serve and enjoy!
