Bison Pot Roast

Equipment

Ingredients 

  • 3 lbs bison chuck roast

  • 5 carrots, chopped

  • 3 celery sticks, chopped

  • 1 large yellow onion, diced

  • 5 garlic cloves, minced

  • 1.5 lbs potatoes, 1” pieces

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp thyme

  • 1 tsp rosemary

  • 2 tbsp olive oil

  • 4 cups beef broth

  • Parsley

Instructions 

Prep

  • Pat the bison dry.

  • Cover with salt and pepper.

  • Heat olive oil in the caste iron on medium.

  • Once sizzling, brown the bison on all sides.

  • Place in the crock pot.

  • Add the onion and garlic to the pan and cook until brown, about 5 minutes.

  • Transfer to the slow cooker.

Slow cook

  • In the slow cooker, add the broth, carrots, celery, spices, and parsley.

  • Cover and cook for 5 hours on LOW.

  • Add the potatoes and cook for another 3 hours.

  • Serve and enjoy!
