Liver Pate
Liver is not delicious…but it’s full of nutrients. Liver pate is a way to still consume liver without noticing the taste. This recipe uses beef liver, but chicken, lamb, or bison would be great too! Be sure to purchased from a trusted, high-quality source with grass-fed beef or free range chickens.🐓

Ingredients
Grass-Fed Beef Liver
1 tbsp flour
4 tbsp grass-fed butter
1 medium onion, diced
1/2 tsp salt
1/2 tsp thyme
1/2 tsp black pepper
4 oz heavy cream
Instructions
Cook the liver
Remove the liver from the package and pat dry with a paper towel.
Season on both sides with spices and flour.
On medium heat, add the butter to the caste iron.
Once heated, add the liver and cook until lightly brown on both sides, 5-8 minutes.
Transfer the liver to the blender. Don’t blend yet.
Put the onions in the cast iron and cook until soft, 5-8 minutes.
Add the heavy cream to deglaze the pan.
Scrape the onions, remaining spices, ad cream into the blender.
Make the pate
Pulse until the contents become a thick paste.
Storage
Scoop into ice cube trays
Store for later use
Usage
Remove from the ice cube tray, let defrost, and add to the dish.

Nutritional note
Liver is rich in vitamin A, choline, iron, zinc, vitamin B12, folate - all nutrients that are especially great for pregnant women and women who want to conceive. Liver is safe to eat during pregnancy in small quantities. (*Consult your doctor to check if liver is good for you, specifically)
Note, that only 2-4 ounces of liver should be consumed per week, per person - about 3 - 4 ice cubes. When adding to a recipe, consider these guidelines and adjust to the recipe serving size.
