Buffalo Chicken Mac and Cheese

Equipment

Ingredients 

  • 16 oz elbow macaroni

  • 1 rotisserie chicken

  • 6 tbsp butter

  • 6 tbsp all-purpose flour

  • 3 cups milk

  • 2 cups shredded Cheddar cheese

  • 2 cups shredded Monterey Jack cheese

  • 1/2 tsp black pepper

  • 1/2 cup hot sauce (prefer Sweet Baby Ray’s Buffalo Sauce)

Instructions 

Prep

  • Bring a large pot of salted water to boil.

  • Cook macaroni until tender, about 8 minutes.

  • Remove all meat from the rotisserie chicken.

  • Chop into bite size pieces and set aside in a medium bowl.

Cook

  • On medium heat, melt the butter in a large Dutch oven.

  • Slowly whisk in flour until a thick paste forms.

  • Cook about 1 minute, until golden.

  • Pour in and continually whisk in milk.

  • Cook and stir until smooth, about 5 minutes.

  • Season with black pepper.

  • Stir in shredded cheese until melted.

  • Stir in hot sauce, taste level of spiciness.

  • Add chicken and stir.

  • Serve warm and enjoy!
