Instructions 

Prep

  • Combine flour, yeast, water and salt in a mixer.

  • Mix until smooth, about 10 minutes.

  • Cover bowl and let rise for 4 hours.

  • Turn out dough and knead breifly.

  • Rest 10 minutes.

  • Shape into a tight ball.

  • Oil the Dutch oven.

  • Place the dough inside and let rest for 1 hour, covered.

Bake

  • Preheat the oven to 450 degrees.

  • Brush the dough with olive oil on all sides.

  • Score and sprinkle with salt.

  • Cover and bake for 30 minutes.

  • Reduce heat to 375 degrees, uncover, bake until browned.

  • Rest for 30 minutes on a rack before serving.
