Instructions
Prep
Combine flour, yeast, water and salt in a mixer.
Mix until smooth, about 10 minutes.
Cover bowl and let rise for 4 hours.
Turn out dough and knead breifly.
Rest 10 minutes.
Shape into a tight ball.
Oil the Dutch oven.
Place the dough inside and let rest for 1 hour, covered.
Bake
Preheat the oven to 450 degrees.
Brush the dough with olive oil on all sides.
Score and sprinkle with salt.
Cover and bake for 30 minutes.
Reduce heat to 375 degrees, uncover, bake until browned.
Rest for 30 minutes on a rack before serving.
