Speculaas Cookies
A traditional cookie from Holland made on the feast day of St. Nicholas. 🎅🏻

Ingredients
½ cup + 1 Tbsp soft butter
¾ cup brown sugar (packed)
1 egg
2¼ cups cake flour
¼ tsp salt
1 tsp baking powder
1 tsp ground cinnamon
1 tsp ground cardamom
1 tsp ground nutmeg
1 tsp ground cloves
1 tsp ground fennel
1 tsp ground allspice
1 tsp ground star anise
lemon zest
orange zest
Icing
1/2 cup confectioners' sugar
4 tsp milk
Instructions
Prep
Mix the butter and brown sugar until light and fluffy.
Add the egg and mix.
Ground the fennel, allspice, star anise, lemon zest, and orange zest in a blender or food processor.
Sift the cake flour, salt, baking powder, and spices.
Add to the butter and mix well.
Wrap in wax paper and rest in the fridge overnight.
Bake
Take out the dough and let it soften.
Preheat the oven to 400 degrees.
Roll the dough flat on a floured surface and cut using cookie cutters.
Place on baking sheets lined with parchment paper.
Bake for 10-12 minutes.
Let them cool for 10 minutes.
Frost
Stir together sugar and milk to get an icing consistency.
Drizzle on the cookies once they’ve cooled.
