Speculaas Cookies

A traditional cookie from Holland made on the feast day of St. Nicholas. 🎅🏻

Recipe

Time: ~ 12 hrs

Servings: 24 cookies

Equipment

Ingredients 

  • ½ cup + 1 Tbsp soft butter

  • ¾ cup brown sugar (packed)

  • 1 egg

  • 2¼ cups cake flour

  • ¼ tsp salt

  • 1 tsp baking powder

  • 1 tsp ground cinnamon

  • 1 tsp ground cardamom

  • 1 tsp ground nutmeg

  • 1 tsp ground cloves

  • 1 tsp ground fennel

  • 1 tsp ground allspice

  • 1 tsp ground star anise

  • lemon zest

  • orange zest

Icing

  • 1/2 cup confectioners' sugar

  • 4 tsp milk

Instructions 

Prep

  • Mix the butter and brown sugar until light and fluffy.

  • Add the egg and mix.

  • Ground the fennel, allspice, star anise, lemon zest, and orange zest in a blender or food processor.

  • Sift the cake flour, salt, baking powder, and spices.

  • Add to the butter and mix well.

  • Wrap in wax paper and rest in the fridge overnight.

Bake

  • Take out the dough and let it soften.

  • Preheat the oven to 400 degrees.

  • Roll the dough flat on a floured surface and cut using cookie cutters.

  • Place on baking sheets lined with parchment paper.

  • Bake for 10-12 minutes.

  • Let them cool for 10 minutes.

Frost

  • Stir together sugar and milk to get an icing consistency.

  • Drizzle on the cookies once they’ve cooled.
