Zuppa Toscana

Recipe

Equipment

Ingredients 

  • 1 pound ground Italian sausage

  • 1 tablespoon butter

  • 1 tablespoon coconut oil

  • 1 small yellow onion, diced

  • 3 cloves garlic, minced

  • 1 teaspoon hot sauce

  • 1 teaspoon liquid aminos

  • 1 teaspoon mustard powder

  • 1 teaspoon red pepper flakes

  • ½ teaspoon dried oregano

  • ½ teaspoon dried basil

  • 5 cups chicken broth

  • 1 cup heavy cream

  • 3-4 small russet potatoes, about 1 lb.

  • 3 cups kale, roughly chopped, stems included

Instructions 

Prep

  • Dice onion

  • Mince garlic

  • Wash and chop potatoes into 1/4” cubes

  • Wash and roughly chop kale

Cook

  • In the large pot, cook the sausage on medium heat until cumbled. Set aside in a medium bowl.

  • Add the butter and onions. Cook until softened.

  • Add the garlic, hot sauce, aminos, and seasonings. Cook for another minute.

  • Slowly add the broth and cream.

  • Bring to a boil, reduce to a simmer.

  • Add the potatoes. Simmer until fork-tender.

  • Add the sausage and kale. Simmer for five minutes.

  • Serve!
