Healthy Banana Muffins

The perfect protein-powered post-exercise snack. 🏋🏽‍♂️

Equipment

Ingredients 

  • 3 bananas, blended into a puree

  • 2 eggs

  • ¼ cup honey

  • 1 teaspoon vanilla extract

  • ½ cup blanched almond flour

  • ½ cup oat flour

  • ½ cup Orgain vanilla protein powder

  • 2 teaspoons baking powder

  • ½ teaspoon cinnamon

  • ¼ teaspoon salt

  • ½ cup chocolate chips

Instructions 

Bake

  • Preheat the oven to 350 degrees.

  • Line a muffin tin with liners andspray the liners with oil.

  • In a large mixing bowl, whisk together bananas, eggs, honey, and vanilla.

  • Whisk in the dry ingredients, except the chocolate chips.

  • Fold in the chocolate chips.

  • Scoop into the prepared tray, filling each liner about 3/4 of the way up.

  • Bake for 18-24 minutes or until a toothpick comes out clean.

  • Remove from the oven and let cool completely before serving.
